How to Make Peanut Butter Spritz Cookies
- Place light-colored, ungreased baking sheets in the refrigerator to chill before baking.
- Cream the softened butter and peanut butter together in a large bowl using an electric mixer at medium speed.
- Beat in the brown and granulated sugar until the mixture is light and fluffy.
- Add the eggs and vanilla extract and mix until combined.
- Combine the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
- Add the dry ingredients into the peanut butter mixture a little at a time, making sure to scrape the sides of the bowl until a soft dough forms.
- Divide the dough into three equal pieces and wrap with plastic wrap.

I have made peanut butter spritz cookies in my press using other recipes many, many times.
This dough is too dry for a cookie press. It would be fine for regular old peanut butter cookies, but really does not properly take the intended shape using the press. They taste good and texture is decent as well, but I will be going back to an old recipe if I want to use the press again.
