Firecracker Chicken Wraps
Crispy fried tortillas stuffed with spicy chicken, melted cheese, and served over shredded lettuce with a cool avocado-lime dip on the side.

- 2 cups cooked chicken - finely chopped
- 4 ounces cream cheese - softened
- 1 cup shredded Monterey Jack cheese
- ½ cup diced red bell pepper
- 1 jalapeño - seeded and finely diced
- 2 green onions - thinly sliced
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 burrito-size flour tortillas
- Vegetable oil - for frying
- 2 cups shredded romaine lettuce
- 1 cup diced tomatoes
Avocado-Lime Dip
- 1 ripe avocado
- ¼ cup sour cream
- 1 tablespoon lime juice
- 1 tablespoon chopped cilantro
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- 1 to 2 tablespoons water - as needed
Instructions
- In a large bowl, combine the chicken, cream cheese, Monterey Jack, bell pepper, jalapeño, green onions, chili powder, garlic powder, smoked paprika, salt, and pepper. Stir until creamy and evenly mixed.
- Spoon the filling just below the center of each tortilla. Fold in the sides and roll tightly.
- Heat about 1 inch of oil in a large skillet to 350°F. Fry the wraps seam-side down for 2 to 3 minutes per side, until golden brown. Transfer to a paper towel-lined plate.
- Blend the avocado, sour cream, lime juice, cilantro, garlic powder, and salt until smooth. Add water a tablespoon at a time until creamy.
- Arrange the lettuce and tomatoes on a platter. Slice each wrap in half on the diagonal, place over the greens, and serve with the dip.

Notes
- Chop the chicken very fine instead of shredding it.
- Warm the tortillas for an easy roll.
- Fry in batches and let the oil come back to temperature between rounds.
