- 1 cup lemon yogurt
- ⅓ cup vegetable oil

- ¼ teaspoon baking powder
Instructions
- Preheat the oven to 325°F
- Grease and flour a 9x5 loaf pan.
- In a large bowl, whisk the egg, yogurt, vegetable oil, and lemon juice.
- In a small mixing bowl, combine the flour, sugar, salt, baking soda, and baking powder.
- Gently stir the dry ingredients into the wet ingredients.
- Pour batter into the prepared loaf pan.
- Bake in the preheated oven for 45-50 minutes.
- Check with a toothpick for doneness when the top of the loaf is golden brown.
- Allow the lemon loaf to cool for 10 minutes before removing from the loaf pan.
Notes
Store in an airtight container on the counter for up to 3 days or up to 5 days in the refrigerator.
For a sweet lemon glaze, combine 1 cup of powdered sugar with 2 to 3 tablespoons of lemon juice and drizzle it on the cooled loaf.
