Peanut Butter Chocolate Thumbprint Cookies
Soft chocolate thumbprint cookies filled with a creamy peanut butter center. Simple, delicious, and perfect for any cookie tray.

- ½ cup unsalted butter - softened
- ½ cup granulated sugar
- ½ cup brown sugar - packed
- ½ cup cocoa powder
- 1 egg
- 1 teaspoon vanilla extract
- 1 ⅓ cups all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup creamy peanut butter
- ¼ cup powdered sugar
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Cream butter, granulated sugar, and brown sugar until smooth.
- Mix in egg and vanilla.
- Whisk dry ingredients in a separate bowl.
- Combine wet mixture with dry ingredients and mix until dough forms.
- Scoop into 1 inch balls and place on prepared baking sheet.
- Press an indentation into each dough ball.
- Bake 10–12 minutes.
- Mix peanut butter and powdered sugar.
- Fill warm cookies with the peanut butter filling.
- Cool completely on a wire rack.
Notes
- Chill dough briefly if it’s too soft.
- Add filling while cookies are warm.
- A small amount of melted chocolate or chopped chocolate makes a nice topping.
