Pink Lemonade Cookies
These Pink Lemonade Cookies are made with a flavorful pink lemonade buttercream. Each bite of these cookies is lemony, sweet, and perfect for the summer.
Ingredients
Pink Lemonade Cookies
- ½ cup butter - room temperature
- 1 cup sugar
- 1 egg
- ¼ cup pink lemonade powder
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 2 tablespoons lemon zest
- 1 ½ cup all purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
Pink Lemonade Frosting
- ¾ cup unsalted butter - softened
- 4 cups powdered sugar
- 1 ½ teaspoons lemon extract
- 3 teaspoons pink lemonade mix
- 1 tablespoon milk
Instructions
How to Make Pink Lemonade Cookies
- Preheat the oven to 350ºF.
- Line two cookie sheets with parchment paper.
- In a large bowl, beat the unsalted butter and sugar until creamy.
- Mix in the egg, vanilla extract, lemon zest, pink lemonade mix, and lemon juice in the bowl.
- In a medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
- Slowly mix the dry ingredients using an electric mixer on low speed into the wet ingredients.
- Chill the dough for 20 minutes.
- Scoop the cookie dough into 1.5 tablespoon balls (I use a #40 cookie scoop) and place two inches apart on the prepared baking sheets.
- Bake the cookies one cookie sheet at a time 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool for 10 minutes before transferring them to a wire rack to cool completely before frosting.
How to Make Pink Lemonade Frosting
- Beat the unsalted butter until creamy and mix in the powdered sugar a little at a time.
- Mix in the pink lemonade mix as well as the lemon juice.
- Beat until smooth.
- Using a piping bag and tip, decorate the top of the cookies and allow the frosting to harden before moving and storing in an airtight container.
Notes
You can either pipe the frosting onto the cookies or use a spatula to spread the icing onto the tops of the cookies.
