Strawberry Cake Mix Cookies with Chocolate Hearts
Indulge in the sweet simplicity of Strawberry Cake Mix Cookies, a delightful treat that combines the fruity zest of strawberries with the rich indulgence of chocolate hearts. Perfect for Valentine's Day or any day you want to spread some love, these cookies are as fun to make as they are to eat and are made with a box of cake mix!
Ingredients
- 1 box of strawberry cake mix
- 2 tablespoons all purpose flour
- ¼ cup vegetable oil
- 2 eggs
- 1 tablespoon milk
- granulated sugar - for rolling
- Chocolate heart candies
Instructions
- Preheat the oven to 375ºF and line two cookie sheets with parchment paper.
- Add the vegetable oil to a large bowl and beat in the eggs until the mixture is creamy. Sprinkle in the all-purpose flour as well as the boxed strawberry cake mix and add in the tablespoon of milk. Mix the batter until a soft cookie dough forms.
- Roll the cookie dough into balls using a #30 cookie scoop or rolling about 2 tablespoons of dough and roll the balls in granulated sugar.
- Chill the cookie dough balls in the refrigerator for at least 1 hour or 30 minutes in the freezer.
- Place the cookie balls on the parchment paper-lined baking sheet and bake one cookie sheet at a time for 8 to 10 minutes.
- Remove the cookies from the oven and press the chocolate heart into the center of each cookie. Be careful not to move the chocolate around as it will melt as it is moved and may disfigure the heart shape.
- Allow the cookies to cool for 10 minutes before transferring them to a wire rack to cool completely.
- Once completely cool and the chocolate has hardened, place the cookies in an airtight container with parchment paper between the layers of cookies.
Notes
Chilling the dough will create puffy cookies with little spread and is essential to prevent the cookies from baking flat.
If desired, add a teaspoon of vanilla extract to enhance the overall flavor.
This recipe uses Cookies and Cream Chocolate hearts in the center of the cookies but they can be substituted for milk chocolate hearts or even Hershey kisses.
