Cake Mix Cookies (Easy Base Recipe)
An easy shortcut cookie recipe made with a box of cake mix, eggs, and oil. This base method works with many cake mix flavors and creates soft, chewy cookies with minimal prep.
Ingredients
- 1 box dry cake mix
- 2 large eggs - room temperature
- ⅓ cup vegetable oil
- ¼ cup granulated sugar - for rolling
- ½ cup powdered sugar - for rolling
Instructions
- Preheat the oven to 375°F. Line prepared baking sheets with parchment paper and set aside.
- In a large mixing bowl, combine the dry cake mix, eggs, and vegetable oil. Mix until a thick cookie dough forms.
- Scoop the dough into 1-inch cookie dough balls using a medium cookie scoop.
- Roll each dough ball in granulated sugar and then again in powdered sugar until fully coated.
- Place the cookie dough balls on the prepared baking sheet, leaving a few inches of space between each cookie.
- Bake for 5–8 minutes, or until the edges are set and lightly browned.
- Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
- Vegetable oil is the best neutral oil for this recipe and keeps the cookies soft.
- Avoid overbaking for tender, chewy cookies.
- Bake times may vary slightly depending on the flavor of cake mix used.
- Roll in granulated sugar before rolling in powdered sugar to have a nice crinkle on top the top of the cookies.
