Mint Chocolate Cookies

Ingredients
- 1 cup unsalted butter - softened
- ⅔ cup granulated sugar
- ¾ cup brown sugar - packed
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup white chocolate chips
- 1 cup mint chocolate chips
Instructions
- Preheat the oven to 350°F.
- Line cookie sheets with parchment paper and set aside.
- Cream together the softened butter, granulated sugar, and brown sugar.
- Add in the vanilla extract and beat in 1 egg at a time.
- In a separate bowl, mix together the flour, cocoa powder, baking soda, and salt.
- Slowly beat the dry ingredients into the wet ingredients.
- Stir in the white chocolate chips and the mint chocolate chips.
- Roll into 1 ½ - 2-inch cookie dough balls (or use a #30 cookie scoop) and place them on the prepared baking sheet.
- Bake in the preheated oven for 10-11 minutes.
- Allow the cookies to cool on the cookie sheet for five minutes before transferring them to a cooling rack to cool completely.
Notes
For a deeper flavor, add a ½ teaspoon of spearmint extract to the cookie dough batter.
For a more intense chocolate flavor, stir in some dark chocolate chips before baking.
